01 - Combine cottage cheese and softened cream cheese in a medium bowl. Mix thoroughly until mostly smooth, leaving a few curds for texture.
02 - Add chopped chives and diced red onion to the cheese mixture. Stir until evenly distributed throughout.
03 - Using slightly wet hands or a small cookie scoop, shape the mixture into 16 evenly sized bite-sized balls.
04 - Spread everything bagel seasoning on a plate. Gently roll each ball in the seasoning to coat completely. Optionally roll some bites in extra sesame or poppy seeds for variety.
05 - Arrange coated bites on a serving platter. Refrigerate for at least 15 minutes before serving to achieve optimal texture.
