01 - Line a mini muffin tin or a baking sheet with small silicone or paper liners.
02 - In a medium mixing bowl, combine the Greek yogurt, peanut butter, honey or maple syrup, vanilla extract, and salt. Stir until the mixture is completely smooth and well blended.
03 - Gently fold in the mini chocolate chips and chopped peanuts, if using, until evenly distributed throughout the mixture.
04 - Spoon the mixture evenly into the prepared liners, filling each to the top — about 1 tablespoon per bite.
05 - Use the back of a spoon to smooth and level the surface of each bite.
06 - Place in the freezer for at least 2 hours, or until the bites are completely firm and set.
07 - Once fully frozen, remove the bites from the molds and transfer them to an airtight container. Store in the freezer until ready to serve.
