High Protein No Sugar Monkey Bread (Printable)

# What You Need:

01 - 2 cups almond flour
02 - 1 cup vanilla whey protein powder
03 - 2 teaspoons baking powder
04 - 1/4 teaspoon salt
05 - 3/4 cup nonfat Greek yogurt

08 - 1 tablespoon melted coconut oil
09 - 1 teaspoon vanilla extract

10 - 1/4 cup melted butter or coconut oil
11 - 2 tablespoons granular erythritol or monkfruit sweetener
12 - 2 teaspoons ground cinnamon

→ Optional Glaze

13 - 1/3 cup plain Greek yogurt
14 - 1-2 tablespoons powdered erythritol
15 - 1/2 teaspoon vanilla extract

# How-To:

01 - Preheat oven to 350°F. Grease a bundt pan or deep round baking dish thoroughly with cooking spray or oil.
02 - In a large mixing bowl, combine almond flour, vanilla whey protein powder, baking powder, and salt. Whisk together until well blended.
03 - In a separate bowl, whisk Greek yogurt, eggs, almond milk, melted coconut oil, and vanilla extract until completely smooth and creamy.
04 - Pour wet ingredients into dry ingredients. Stir with a spatula or mix by hand until a soft, cohesive dough forms. The dough will be slightly sticky.
05 - In a small bowl, mix erythritol sweetener and ground cinnamon until evenly combined.
06 - Pinch off approximately 1-inch pieces of dough and roll into balls. Dip each ball into melted butter or coconut oil, then roll thoroughly in the cinnamon-sweetener mixture until evenly coated.
07 - Layer the coated dough balls in the prepared bundt pan or baking dish, arranging them evenly and leaving slight space for expansion during baking.
08 - Bake for 25-30 minutes until golden brown on top and set in the center. A toothpick inserted should come out clean.
09 - Allow the monkey bread to cool in the pan for 10 minutes before removing or glazing.
10 - While bread cools, whisk plain Greek yogurt, powdered erythritol, and vanilla extract in a small bowl until smooth and drizzle-consistency.
