A light and satisfying soup with fresh peas, diced ham, turkey, and herbs for flavor.

# What You Need:

→ Meats

01 - 3.5 oz smoked ham, diced
02 - 5.3 oz cooked turkey breast, diced

→ Vegetables

03 - 14 oz fresh or frozen spring peas
04 - 1 medium yellow onion, finely chopped
05 - 1 medium carrot, diced
06 - 1 celery stalk, diced
07 - 2 cloves garlic, minced

→ Liquids

08 - 4 cups low-sodium chicken or vegetable broth
09 - 2 tbsp olive oil

→ Seasonings

10 - 1/2 tsp salt (or to taste)
11 - 1/4 tsp freshly ground black pepper
12 - 1/4 tsp dried thyme
13 - 2 tbsp fresh parsley, chopped (plus extra for garnish)

→ Optional

14 - 2 tbsp crème fraîche or sour cream (for serving)
15 - Crusty bread (to serve)

# How-To:

01 - Heat the olive oil in a large pot over medium heat. Add the onion, carrot, and celery, and sauté for 5 minutes until softened.
02 - Add the garlic and cook for 1 minute, stirring frequently to prevent burning.
03 - Stir in the diced ham and turkey, and cook for another 2 minutes to meld flavors.
04 - Add the peas, broth, thyme, salt, and pepper. Bring to a gentle boil, then reduce heat and simmer uncovered for 15 minutes.
05 - Remove about one-third of the soup and blend it until smooth using an immersion or countertop blender. Return the purée to the pot and stir to combine, creating a creamy yet chunky texture.
06 - Taste and adjust seasoning if needed. Stir in the fresh parsley.
07 - Serve hot, garnished with a dollop of crème fraîche or sour cream and extra parsley if desired. Pair with crusty bread.

# Expert Advice:

01 -
  • The texture is this perfect in-between, not quite smooth but not chunky either, like you put thought into it but didnt overthink it
  • It comes together in under an hour but tastes like something that simmered all afternoon
02 -
  • Blending hot soup can be dangerous, so either let it cool slightly first or use an immersion blender directly in the pot
  • The soup will thicken as it sits, so if you're making it ahead, thin it with a little extra broth when reheating
03 -
  • If you want a completely smooth soup, blend the entire batch instead of just one-third
  • Smoked turkey works beautifully in place of ham if you want a lighter smoky flavor
