- Line an 8x8-inch baking pan with parchment paper, leaving overhang on sides for easy removal of bars later.
- In a large saucepan over medium-low heat, combine peanut butter, honey, and butter. Stir continuously until completely smooth and well blended. Remove from heat.
- Gently fold Honey Chex cereal into the warm peanut butter mixture until every piece is evenly coated.
- Transfer mixture to prepared pan. Press firmly and evenly using a spatula or back of a spoon to create a compact, uniform layer.
- Place chocolate chips and 2 tablespoons peanut butter in a microwave-safe bowl. Microwave in 30-second intervals, stirring between each, until completely melted and smooth.
- Pour melted chocolate mixture over the cereal base. Spread evenly with a spatula to cover completely.
- Refrigerate for at least 1 hour until chocolate is firm and bars are completely set.
- Lift bars from pan using parchment paper overhang. Cut into 16 equal squares and serve immediately or store refrigerated.
